Happy Thursday everyone! This past weekend for Easter, I decided to be basic and make Mini Egg cookies like every other person on my Instagram feed. Instead of doing the typical shortbread or chocolate chip with Mini Eggs inside, I decided to get a little creative. I used cake mix as my flour and sugar! Yes, cake mix! I bought just a simple Betty Crocker mix (White) added eggs, oil, rainbow sprinkles and Mini Eggs! They were phenomenal and my family went crazy over them! Prep time: 15 mins Cook time: 12 mins Serving: 24 cookies Ingredients 1 Pack of Betty Crocker White Cake Mix 3/4 Oil 2 Eggs 1/2 Container of Rainbow Sprinkles 1 1/4 Cup of Mini Eggs (more or less as desired) Instructions 1. Heat oven to 350°F. 2. Mix all ingredients with large spoon until well blended. 3. Roll into 24 balls; place, 4 inches apart, on baking sheets with parchment paper 4. Bake for 12 minutes (Do not overbake!) Cool 5 min. on baking sheets; transfer to wire racks. Cool completely. 5. Eat up and enjoy! Finished Product
